Wednesday, June 19, 2013– Dumplings and Wontons at West Elm Market, DUMBO

Love dumplings and eager to make them at home? Join us in this 2-hour dumpling extravaganza, now at West Elm Market in DUMBO! We’ll learn the basics of wrapping both Chinese dumplings and wontons. Even if you’ve never cooked Chinese food, you can easily learn how to make scores of dumplings with these simple techniques. After hands-on practice in wrapping, we will move on to the cooking process. You’ll learn a sure-fire method for pan-frying dumplings to crispy perfection. And you’ll also learn how to prepare the wontons as a deliciously spicy Sichuan appetizer, and get tips on other ways to prepare them at home. And vegetarians are welcome! New Fall Cooking Classes: Dim Sum, Soup Dumplings, and More...

Maybe it's a holdover from childhood, but every fall I automatically default to a back-to-school mindset. I buy more books than usual. I go here and stock up on pens. And I look for excuses to be back in a classroom again, whether it's on the teaching or learning end. Luckily, classes you take as an adult can be a lot more fun than chemistry or Econ 101. 

Like cooking! (I'm biased, of course, though I would say this even if I didn't teach cooking classes for a living.) 

This is all to say that I'm excited to announce a ton of new classes this fall, including dim sum, soup dumplings, and creative vegetarian dumplings. More below!

On September 18th, I will be teaching the first-ever cooking class at West Elm Broadway on the Upper West Side. It's a fantastic space with a lot of light. The class is a twist on my regular dumpling class, an all-vegetarian class called Dumplings and Wontons - Seasonal Vegetables. It's a hands-on class on making dumplings and wontons, and this time we'll use three creative vegetarian fillings with produce from the Greenmarket such as kale, spinach, and sweet potatoes.

On September 25th, I'm teaching a Dumplings and Wontons - Classic Edition class at West Elm Market in DUMBO, in which we work with both a meat and and vegetarian filling (usually kale or spinach.) Like the seasonal veggies Dumplings class, you'll also learn different methods for folding dumpling and wontons and sure-fire ways for cooking them. This class is great for omnivores as well as vegetarians!

Plus! In October I'm teaching a Weekend Cooking Camp at Brooklyn Brainery! You can choose between a workshop that demystifies Shanghainese Soup Dumplings (by popular student request!) and an intensive Dim Sum for Everyone class, where you'll learn favorites such as Steamed Pork Buns, Shu Mai, and many more dishes. August: Chinese Cooking Classes in New York

Ever since my cookbook came out last December, I've been fortunate to have found more time and spaces around New York to teach cooking classes. And to everyone who has attended a class in the past year, thank you for all your great feedback on new classes you'd like to see!

I'm happy to announce some new offerings for August, along with some old favorites. This month I'm starting to teach at 3rd Ward in Brooklyn. We have two weekend classes coming up, a very hands-on Dumpling Making Workshop in which we'll make everything from scratch (including the wrappers) and a Chinese Vegetarian Cooking class featuring four of my favorite meatless dishes. Then in late August, we have two daytime dumpling classes at the Brooklyn Brainery for all you freelancers, teachers, and anyone else who wants to learn some new cooking skills before the end of the summer!

Oh, and also at the end of August, I'm once again teaching the ever-popular  Hong Kong-Style Dim Sum at The Institute of Culinary Education.

DIY tofu triumph and tasting of everyone's handiwork

Ah, the new year. Time for reflection, refreshing andrestart. Take a half step back and a full step forward. If you subscribe to anAsian mindset toward the new year, you can celebrate twice – first for thesolar calendar and then again for the lunar calendar. (February 10, 2013 willlaunch the Year of the Snake.) That means you can take your time to set goalsand meet them!

I’ve been cleaning my office and making sure that I squareaway past commitments and have new ones in check on my schedule. Last year wascrazy with the book launch, travel and events. I hope to mostly stay close tohome this year, especially because I have the book manuscript to work on.

Additionally, I’ve  committedto teaching a number of local cooking classes. They are all hands-on classesand geared for lots of learning and fun.

It used to be that I had to travel faraway to teach engaging,intensive classes but this won’t be the case in 2013. Thus far, the class scheduleincludes:

We eat all the dumplings we make.
4-hour classes atLove Apple Farms: We sold out the first time around with this series ofclasses so we’re running them again. Some people took all of them, driving asfar as Fresno. I already know that someone is flying out from the Midwest forthe Viet class. Love Apple Farms is a unique biodynamic farm in the Santa CruzMountains, about 1 1/4 hours from San Francisco. There are locals who sign upbut many people make a day-long excursion to cook in the mountains, thenhang-out by the beach for dinner.
Sun, Jan 27, 12-4pm:Asian Dumplings (great for gearing up for Chinese New Year)Sun, Feb 24, 12-4pm: DIY Asian Tofu(plus a mostly vegetarian full menu of tofu dishes)Sat, Mar 16, 12-4pm: Get Into the VietKitchen (includes banh xeo sizzling rice crepes)You cook and eat but don't have to clean up.
5-hour classes at theSan Francisco Cooking School: This is a brand new facility in San Francisco.The classes will be intensive and fun so I hope you’ll join me to break in thenew school. I’ve got a weekend booked in March. The longer class format meansthat we can do interesting things. For example, in the tofu class, we’re going tomake yuba, fresh tofu skin that’s out of this world, not to mention vegan. Thedumpling class got tweaked a bit too from others that I’ve taught.
Sat, Mar 23,10am-3pm: Homemade Tofu (go from bean to curd, make yuba, and awhole meal of tofu) Sun, Mar 24, 10am-3pm: Asian Dumplings(master classic doughs, shapes, and cooking techniques)

1/2 day at CakebreadCellars: I like to offer a little wine at the end of each cooking class butfor this special class at renowned Cakebread Cellars, the winery is doing thepairings! Hurray. I’m looking forward to what the winery uncorks. We’ll startoff with a morning hands-on class of Vietnamese favorites and then you get totake a private tour of the winery. Finally, everyone gathers for lovely sit-downlunch with paired wine. The staff and I will be on hand to answer questions. Nowonder Cakebread calls their cooking classes the “Good Life Series.”

Sat, May 18,9:30am-early afternoon: Viet Spring Celebration (cook, drink, andlearn about Viet food and wine pairing)

With all of these cooking classes, there is a staff to cleanup. You attend to cook and tinker. At the end, we eat the food that we make.Hope to cook with you this year.

#FoodforThought Classes in New York

How is everyone doing post-hurricane? We’ve seen New York and the entire Northeast battered by a lot last week, as we’ve all experienced either first-hand or on the news. And now it’s time to focus on recovery.

I want to share this initiative that CourseHorse and Time Out New York are putting together to benefit Food Bank of NYC, which is playing a key role in the recovery from Hurricane Sandy. From November 12 through 18, many unique food-related and other classes will be held around New York. Most classes will be priced at $65, with proceeds going to the Food Bank for NYC. You can also get special gift cards good for future use on any of CourseHorse’s 20,000+ classes in New York. In addition, anybody can ‘Provide a Meal’ for free just by registering via a special Facebook campaign.

Chinese Cooking Classes in Brooklyn

Since many of you have been emailing for info on upcoming Chinese cooking classes, I’m excited to share with you two in Brooklyn that are coming up in December. (Check out the new Classes and Events page for all classes.) I’m teaching a Wontons and Dumplings! class at the Brooklyn Brainery on Monday Dec 12, but it sold out quickly, though you can still sign up for the waiting list.

The other class, Chinese Take-Out at Home, is on Thursday Dec. 9 at the lovely Ted and Amy Supper Club. We have a fun evening planned, and the class is also connected with the cookbook I’ve been working on that will be out next year. You’ll learn the secrets to making quick ‘n easy scallion pancakes with accompanying dip, cold sesame noodles, and authentic kung pao chicken, that are all less greasy and even more delicious than at your favorite restaurants.

I first cooked at Ted and Amy Supper Club over the summer and it is seriously one of my favorite places in Brooklyn.
