Juicy Asian Oven Roasted Pulled Pork for Sliders, Pasta or Rice.

Juicy Asian Oven Roasted Pulled Pork Recipe for Sliders, Tacos, Rice and Pasta! from WhiteOnRicecouple.comThis is the unabashed, meat-lovers edition of pork. Apologies if the photo is an abrupt, in-your-face visual of juicy and saucy pork in its entirety. In fact, there’s no scattering of pretty garnish nor greens nor linen-pretty. It’s a delicious and amazing pulled pork dish and that’s pretty much all we wanted to share with you. Sometimes it’s more effective to just past all the words and give you a taste of the recipe as soon as possible.

The pulled pork is so amazing, we decided to get past all the fuss and get straight to the point. And here’s the point: make this as soon as you can.

Juicy Asian Oven Roasted Pulled Pork Recipe for Sliders, Tacos, Rice and Pasta! from WhiteOnRicecouple.comA few weeks ago we found some frozen pork shoulder in the freezer (surprise!) and needed to make something with it before it was forgotten again in the dark, abyss of the garage freezer. We had remembered a Lucky Peach magazine recipe for an oven pulled pork. Fast forward a few years later we now have some pork shoulder and an appetite for something porkie.

We went a little crazy with the spices, adding some big punches of flavor to the marinade and sauce. We’re not apologizing for it, but rather, we’re warning you because you’ll be so addicted to the flavor combination of garlic, fish sauce, mustard and sugar that you just might want to use this on some other of your favorite meats.

This was the pulled pork recipe that kept on giving. For our first meal, we had pulled pork tacos. Next, indulged in pulled pork over rice. Later, it was pulled pork sliders. Last, with what was leftover, we made a fabulous pulled pork pizza.

It wasn’t until we pigged out on all these juicy pulled pork dishes that we realized just how versatile and wonderful it was. And we’re not tired of it yet, because with Super Bowl next week, we’re already planning some stellar uses for our next batch. And how about you? If you make this and have some new ideas on how to eat it with, let us know. We’re all ears.

Enjoy,

diane and todd

Juicy Asian Oven Roasted Pulled Pork Recipe for Sliders, Tacos, Rice and Pasta! from WhiteOnRicecouple.com

Yield: Serves 6-8

Total Time: 5 hours

You can use this pulled pork for tacos, sliders and sandwiches. It's also great on pasta and rice because the juicy sauce is so flavorful. Feel free to cook the pulled pork for a little longer to make the pork more tender and melt-in-your-mouth. We prefer to use a bone-in pork shoulder, but it works great with a de-boned chunk of meat too. And, remember, don't waste the sauce!

about 4-5 pound pork butt or pork shoulder1 medium onion, diced2 Tablespoons olive oil5-6 medium cloves garlic, minced1- 15 oz. can diced or crushed tomatoes2 Tablespoons finely grated fresh ginger1/4 cup fish sauce or soy sauce (but fish sauce tastes better! try it)2 Tablespoons chili garlic sauce1 Tablespoon spicy brown mustard1/4 cup brown sugar, packed1 teaspoon fresh cracked black pepperPre-heat oven to 350 degrees F.Heat a medium sauce pan over medium-high heat. Then add oil, onion and garlic. Cook onions and garlic till soft and fragrant.Add tomatoes, ginger, fish sauce, chili garlic sauce, mustard, brown sugar and black pepper. Gently stir the sauce and simmer on low heat for about 5 minutes. Remove from heat and set aside.Heat large cast iron pan or deep oven proof skillet on medium-high heat. Lightly coat the pork shoulder with oil and season all sides with salt and pepper.Sear each side of the pork shoulder on the hot pan until the pork is brown. About 3-5 minutes per side.Remove the pan or skillet from the heat and lay the pork in the pan.Pour the tomato sauce mixture over the pork into the oven proof pan. Cover the pork with aluminum foil.Bake the pork for about 3-4 hours, or until the pork is tender and easily shreds with a fork.Allow the pork to rest for about 15 minutes before shredding the whole shoulder. Keep foil over the shredded pork to keep it warm before serving.

Building an Asian Wok Kitchen

Wok Kitchen

I am so thrilled to let you know that I finally completed my remodel project of converting my small walk-in-pantry into an Asian wok kitchen, thanks to my sponsors Atherton Appliance and BSC Culinary in the San Francisco Bay Area!

Being an Asian cooking enthusiast, especially wok cooking, I have never been happy with my American kitchen with regular cook tops and range hood. I have lost count of how many times I set off the smoke detector and alarm in my house when I fire up my wok for a quick stir-fry. If you are into Asian cooking or wok cooking, you would understand what I mean. The heat is not hot enough, the range hood doesn’t suck away the grease and smoke, and the smoke alarm would go off the hook whenever we are trying to create “wok hei” (breath of wok). So, it’s been my dream to have a wok kitchen—in addition to a regular kitchen. I cook so much for the blog and for my family that I indeed need two kitchens, and thanks to Atherton Appliance and BSC Culinary, my dream finally comes true.

My walk-in-pantry is small, in fact, it’s just 67-inches wall-to-wall. However, space is not an issue if you know how to plan and design the small space into something functional for your needs. I wanted to have two (2) 15-inch gas cooktops, and one of them specifically for wok cooking with high-power burner / BTU. I do not need a huge counter space as long as I have some space on both sides of the burner. I called in a kitchen designer and we drew out the plan. It’s the best way to use up the limited space I have, while being completely functional and efficient. There are cabinets, drawers in the wok kitchen, and one of the cabinets is equipped with a roller shelf unit for my sauces so my limited kitchen counter space will be mostly clutter free.

I reached out to Atherton Appliance and BSC Culinary. When I lived in the bay area, I visited Atherton Appliance in Redwood City and fell in love with its ample offerings of high-end and specialty kitchen appliances. I proposed my plan to them and that my dream cook tops for my wok kitchen would be Wolf gas cooktops. They came back to me and proudly sponsored the Wolf 15-inch multi-function cooktop and the Wolf 15? gas cooktop. Thanks so much to their generosity.

The remodel took a little long than anticipated but I now have an amazing and modern looking wok kitchen. Even though the space is small, it’s exactly what I wanted—a kitchen where I can whip up Chinese stir-fries with ample wok-hei (breath of wok), making curries, stews, soups, and all sorts of delicious Asian food. The wok kitchen is going to be my everyday kitchen where I cook while the regular kitchen can be used for lighter cooking. Now that’s the perfect set up for a cooking enthusiast like me. Let’s check out my wok kitchen.

Here is my walk-in pantry before the remodel.

After the remodel, the Asian wok kitchen.

Wok Kitchen

The gorgeous Wolf gas cooktops. I have two (2) 15-inch cooktops side-by-side, and I can cook up to 3 dishes at the same time.

This Wolf 15-inch Multi-Function Cooktop is made specifically for Asian cooking. The bottom of the wok sits perfectly on top of the flame, which is 22,000 BTU/hour. The direct heat will make sure that I get Asian stir-fries with plenty of “wok hei” (breath of wok).

This Wolf 15-inch Gas Cooktop has two hobs that allow me to make soup, stew, curry, or other dishes while I am stir-frying.

Even though the space is small, my Asian wok kitchen is practical, functional, and I can comfortably cook in the kitchen. I have a roll-out shelf for my Asian sauces and cooking oil, etc. It’s so convenient and saves space, plus my countertop will be mostly clutter free. Because the kitchen is small, it’s also easier for me to clean up and I can keep my regular kitchen spotless all the time.

I have also shot a short video walk-through of my kitchen below. Please check it out now.

If you are in the Bay Area and are planning to have a kitchen upgrade, remodel, or to equip your new home, do stop by Atherton Appliance and BSC Culinary to browse their wide selections of kitchen appliances. I am sure you will be able to find something you love there, and while you are at it, tell them that Rasa Malaysia sends you there!

Season with Spice Asian Spice Kit Giveaway

I’m partnering with my friends at Season with Spice to giveaway a Season with Spice Asian Spice Kit. There will be one (1) winner whom will receive one (1) Season with Spice Asian Spice Kit containing 7 medium sized spice jars (listed below). The suggested retail price of the Season with Spice Asian Spice Kit is US$34.43.

Launched in 2011 in my home island of Penang, Season with Spice is a spice shop now located in Minnesota, specializing in premium Asian spices and handcrafted blends.

My friend Reese, also from Penang, developed the company with her husband, Mark, while they were living on the island, working on various community projects in the UNESCO World Heritage site of George Town. One project included the creation of a local spice trail, which gave them a better understanding of the cultural, historical, environmental, and culinary value of spices. This understanding grew into a passion, and Season with Spice became an outlet to share their knowledge of spices, and all the deliciously spicy recipes they continue to share on their company’s blog.

Season with Spice – now an established Asian Spice Shop in the US – offers over 100 premium spices and blends to help you cook up some of your favorite Asian dishes at home. They’ve selected a few of their favorites for you to stock up your spice rack with new, exciting flavors:

Penang Chinese Five Spice: Warm, sweet, and aromatic, Chinese Five Spice ??? is the principal spice blend used in Chinese cooking. The special recipe of this classic mix is a Penang-inspired version, which includes additional spices – most notably citrus powder, cardamom, and nutmeg. It’s a versatile blend that will impart a wonderfully bold flavor to any recipe that calls for Chinese Five Spice.Malaysian Satay Seasoning: Chicken satay – those tasty little tidbits skewered with bamboo sticks, grilled over a charcoal fire, and served with a spicy peanut dipping sauce – is the perfect combination of smoke & spice. This Malaysian Satay Seasoning represents that flavor, rich in turmeric, coriander, ginger, and cumin, blended with the essential base ingredients of many Malaysian dishes – garlic & shallots. Then dashes of fennel and galangal for depth, a hint of cayenne for some flare, and finally lemongrass for a citrusy reminder that this is a true Southeast Asian seasoning.Japanese Seven Spice: Spicier than you’d expect for a seasoning commonly found on Japanese tables, but when the heat subsides, the sweet, salty, citrusy, nutty flavors reveal the vivid, versatile qualities of this Japanese Seven Spice (Shichimi Togarashi).Sweet & Spicy Curry Powder: This handcrafted curry blend begins with a blend of coriander, turmeric, fenugreek, and cumin – the base spices to create that familiar, but delectable aroma of curry. Then the warming spices are slowly mixed in – cinnamon for its sweetness; ginger for those spicy, lemony notes; fennel to add an element of freshness; and clove for that heavenly, rich fragrance. And finally, as the flavors combine and harmonize, that’s when the spicy kick is mixed in – black pepper, Kashmiri chili powder, and cayenne pepper.Sichuan Peppercorns: An experience more than a flavor, Sichuan Peppercorns create a simultaneous numbing, tongue-tingling, party-in-your-mouth sensation. Match these magical russet-colored husks with chili peppers to make spicy Sichuan dishes at home such as Kung Pao Chicken, Ma La Tofu, and Dan Dan Noodles.Balinese Pyramid Sea Salt: An all-natural sea salt that forms into hollow, pyramid-shaped flakes that gives this unique salt a delectable texture. This amazing, naturally occurring creation from the island of Bali adds a special taste to your Asian dishes, and a must-try on seafood.Tandoori Seasoning: A combination of rich, red spices – Sweet Spanish Paprika and the essential, vibrant kick of Kashmiri Chili Powder – with a hint of turmeric, creates the base of this bright, aromatic blend. Then the warming spices are mixed in – bold flavors commonly used in North Indian cuisine like ginger, cumin, garlic, and cardamom. For balance, coriander is added in, and for a citrus note, dashes of mango powder. Finally, to emphasize that smoky tandoori flavor, a touch of Smoked Spanish Paprika.

October 30, 2013Asian Dumpling Online Class: Preview and Special VWK Price

Craftsy-dumplings-class-screenshot
Well folks, it’s live — my first online cooking class atCraftsy! Since I didn’t get to see the final cut until the launch today, I’vebeen watching snippets of the 3.8 hours of content. It’s gorgeous, informative, and practical. I’m really reallyimpressed at the quality of the materials and hope that you are too. My editorat Craftsy says it’s been one of top selling classes today and at the time of this post, 98 people have enrolled! Building a dynamic online community DIY dumpling fanatics isincredibly cool.

What makes the online Craftsy class special? It’s like mebeing in your kitchen giving you a quasi-private class. You can turn me onwhenever you want and pause me – kind of like streaming Netflix, though in thiscase, you purchase the class only once. You own Craftsy classes forever so youcan watch as many times as you want, wherever there’s an internet connection, on a laptop, desktop, smart phone or tablet.

I’ve had the opportunity of observing people makingdumplings and practicing in my kitchen countless times. Most people have not,and the Craftsy platform lets you study the techniques until you “get” it. Tightshots like this one make learning easier:

Craftsy-dumplings-filling-screenshotAsk class questions in the right-hand column. Click any of the images  on this post to enlarge.

“Favorite Asian Dumplings from Scratch” is divided intolessons and within the lessons, there are shorter segments. Things are clearlydelineated with title cards (think chapter and subchapter headers in a book). Youwatch each lesson and if you want, pose questions. I check in a couple times aweek to respond to questions.

You can also upload photos of your Asian dumpling projectsto share with me and other students. The 30-second repeat is invaluable forgetting all the moves right for shaping or anything else that you want to clarify.Like a textbook, you can take notes on the screen too. The technological end ofCraftsy is genuinely robust, constructed as an interactive e-school.

Last week I mentioned Craftsy’s 3-camera shoot that includedan overhead camera. This is the benefit of that kind of high-qualityproduction:

Craftsy-dumplings-press-screenshotImagine what this will be like for shaping dumplings!

I love my in-person classes but the hustle and bustle ofthings sometimes prevents me from explaining techniques and concepts to people. And not everyone tunes in too. In the Craftsy class, I tucked little technicaltips to help people in the kitchen. You pay attention when and if you want tobut the content is there. For example, students in my in-person classes oftenask about how to cut or chop ingredients so included some knife skills into theCraftsy class.

Craftsy-dumplings-technique-screenshotMincing scallions doesn't have to be a challenge.

What’s the content difference between in-person and anonline class? I teach hands-on classes and for Asian dumplings, a typical groupof 14 to 20 people will make many types of dumplings. We have the manpower todo it in a 4 or 5-hour session. Craftsy classes are immersive and geared forthe single learner; your eyes would glaze over like a poorly frozen dumpling ifclasses were overloaded with content.

“Favorite Asian Dumplings from Scratch”is a comprehensive lesson in dumpling making as well as Asian ingredients, cooking techniques, and culture. While reviewing the lessons, I said to myself,“Wow, I covered a lot of ground.”

How about the Asian Dumplings cookbook versus the onlineclass? Classes—whether online or in-person —complement what’s printed in thecookbook. A class isn’t a substitute for what’s in a book. Many students whohave my books enroll in my classes to get an interactive experience whileothers are curious about the class subject, enroll, then often decide to buythe book.

You’re welcome to use “Favorite Asian Dumplings from Scratch”for a group gathering. (Hello dumpling parties ahead!) Take the class yourself, prep the ingredients, then get a bunch of people together. Log on to the class andput me on a big screen.

The regular price of theclass is $39.99 but I’ve arranged a permanent25 percent discount for VWK folks. To get the class for $29.99, click here or on the sidebarlink. We are living in an amazing technological era. Posted |
