Chinese Pork Ribs with Plum Preserves + Giveaway

This winter has been super busy here at my Brooklyn studio. Since launching Plate & Pencil, and being busy teaching a ton of post-holiday classes, I've been pretty much sticking to simple nightly cooking routines. Roast chicken and salads. Spaghetti. Takeout. A Sunday of dumpling-making followed by 5 days of dumplings for dinner. I kept meaning to get back into the kitchen to develop a new recipe. And luckily, a few weeks ago, I got asked by Bonne Maman, one of my favorite jam companies, to develop a recipe with the National Pork Board to use one of their delicious jams and preserves with St. Louis-style pork ribs.

How could I say no to developing a recipe for sweet and savory ribs?

When I make Chinese-style roasted meats, there is usually a sweet element involved, whether in the form of honey, sugar, and/or hoisin sauce. So it wasn't a big departure to use plum preserves instead. The thick texture makes the preserves perfect for a marinade, and they whisk easily with other ingredients I have on hand.

Slowstar Vertical Slow Juicer and Mincer Giveaway

To celebrate the upcoming holiday season, I am partnering with my friends at Tribest Life to give away a Slowstar Vertical Slow Juicer & Mincer. There will be two (2) winner whom will receive one (1) unit of Slowstar Vertical Slow Juicer & Mincer each. The suggested retail price of the Slowstar Vertical Slow Juicer & Mincer is US$449.

Constantly seeking ways to help its customers get the highest nutritional value from whole foods in the most efficient way possible, Tribest® is launching a new 2-in-1 vertical slow juicer and mincer with Duoblade® technology. When a juicer uses too much speed, it creates air bubbles that degrade (oxidize) the nutritional value of the juice. The new single auger Slowstar® juicer works at a slower RPM than other vertical juicers on the market to effectively protect even the most delicate nutrients and features more torque power to make that possible. Easily juicing your favorite fruits and vegetables from apples and oranges to carrots and leafy greens, the Slowstar proves that – even when it comes to juicing – slow and steady wins the race.

Unlike other vertical single auger juicers on the market, the Slowstar has a double-edged Duoblade auger that creates a double-cut for less jamming and less pulp in your juice. It easily breaks down stringy fibrous produce and leafy greens such as kale, celery and wheatgrass. Having two edges allows the Duoblade auger to do twice as much work as a traditional auger, which means it only has to spin at 47 RPM to juice the same amount of produce per minute compared to the traditional 80RPM for other slow juicers. This lower speed preserves the nutritional value of the juice by preventing friction and heat during the process and it produces greater juice yield with less foam.

The Slowstar can do more than juice produce. Simply replace the top of the machine with the mincing attachment to turn the Slowstar into a multi-purpose tool that allows you to create your favorite recipes like sorbets, nut butters, pates and sauces and get the most out of your produce.

The Slowstar also features an advanced three stage reduction gear technology that creates more than twice the torque force compared to all other slow juicers. It touts a 200 watt motor with as much torque as a 9HP motor. This power makes crushing, mincing, and homogenizing jobs smooth and effortless even at the Slowstar’s slow speed. Other slow juicers on the market run with a 150 watt motor, equivalent to a 4HP motor.

Eligibility: United States only. No purchase necessary and subject to this official giveaway rules. Closing Date: March 2, 2014, 11:59 pm PST. Winner will be randomly selected and contacted via email on March 3, 2014. The prize is proudly sponsored by Tribest Life. To enter, please follow the steps below.

January 23, 2014Pre-Launch Giveaway: Online Vietnamese Classics Class

Craftsy-pho-class-title

Great news! Next Tuesday on January 28, my second online cooking class with Craftsy launches. “Vietnamese Classics: Pho, Noodles & Beyond" is a fun class that covers a number of favorite go-to Vietnamese dishes, things that I make at home, order out at restaurants – foods like goi cuon rice paper rolls, chicken and beef pho noodle soups, and bun rice noodle salad bowls. I designed the class as a primer on Vietnamese ingredients, cooking techniques, as well as how to shop at Asian markets.

When Craftsy invited me back to teach Vietnamese cooking, they asked me what I wanted to include. Pho(!), of course. But I wanted to offer a tight, focused survey of the classics, so I built the class around popular kinds of rice noodles, a core component of Viet kitchen. Given all that, the class lessons progress in difficulty – from dishes that are doable with supermarket ingredients to those that required a little stretching (i.e., going into the ‘hood for authentic Asian ingredients).

Pho-classics-class-collageJoin me to cook, shop, cook, and eat Vietnamese classics.

For example, I developed a nifty quick version of pho noodle soup, one that I’m truly proud of, that I’d serve you if you came to my home I had only 30 minutes to prepare you something deliciously satisfying. It took a couple of weeks of tinkering in my kitchen to come up with that recipe, a nice segue to the more traditional, slow recipes for chicken and beef pho. I like to push people bit by bit in the books I write and the classes I teach.

I also wanted to take cooks inside an Asian market. That’s the number one obstacle for many people when they’re starting out. “Okay!” the editor and director enthusiastically said. Director/producer Joe Baran scouted and found an Asian market for us to shoot in.

Viet-classics-shoot-collageI have never been in single- or negative-digit temperatures before!

Unfortunately, we scheduled the shoot during the hideous cold spell early last December. But things worked out fine once I managed to avoid slipping on the icy sidewalk and got inside the market. You wouldn’t know it by watching the lesson in the class.

One of highlights of the shoot was the fact that Joe’s family came to the studio. They were very interested in learning about Vietnamese cooking and braved the freezing temperatures to drive to the studio. His older son had tested my quick pho recipe, preparing it to earn an A++ in his junior high cooking class. Joe’s two sons tried out the food we’d made on set, and this photo says it all:

Joe-kidsA major vote of confidence from the Baran boys

The point of this online Viet class -- and my in-person classes too -- is that I help you build a foundation for making the Vietnamese dishes covered in class as well as ones that you may want to try in the future. There's a bit of etiquette too, as I discuss how to avoid pho faux pas. That’s to say, there are lots of takeaways!

As with the Asian dumplings class that I made with Craftsy, this one is packed full of helpful information and entertaining tidbits. Once you’ve bought the class, you own it forever and can watch at your leisure, wherever you want. Plus, you can pose questions and I answer them – just like a classroom.

Leading up to next Tuesday’s launch, Craftsy is giving away one free class enrolment!

Season with Spice Asian Spice Kit Giveaway

I’m partnering with my friends at Season with Spice to giveaway a Season with Spice Asian Spice Kit. There will be one (1) winner whom will receive one (1) Season with Spice Asian Spice Kit containing 7 medium sized spice jars (listed below). The suggested retail price of the Season with Spice Asian Spice Kit is US$34.43.

Launched in 2011 in my home island of Penang, Season with Spice is a spice shop now located in Minnesota, specializing in premium Asian spices and handcrafted blends.

My friend Reese, also from Penang, developed the company with her husband, Mark, while they were living on the island, working on various community projects in the UNESCO World Heritage site of George Town. One project included the creation of a local spice trail, which gave them a better understanding of the cultural, historical, environmental, and culinary value of spices. This understanding grew into a passion, and Season with Spice became an outlet to share their knowledge of spices, and all the deliciously spicy recipes they continue to share on their company’s blog.

Season with Spice – now an established Asian Spice Shop in the US – offers over 100 premium spices and blends to help you cook up some of your favorite Asian dishes at home. They’ve selected a few of their favorites for you to stock up your spice rack with new, exciting flavors:

Penang Chinese Five Spice: Warm, sweet, and aromatic, Chinese Five Spice ??? is the principal spice blend used in Chinese cooking. The special recipe of this classic mix is a Penang-inspired version, which includes additional spices – most notably citrus powder, cardamom, and nutmeg. It’s a versatile blend that will impart a wonderfully bold flavor to any recipe that calls for Chinese Five Spice.Malaysian Satay Seasoning: Chicken satay – those tasty little tidbits skewered with bamboo sticks, grilled over a charcoal fire, and served with a spicy peanut dipping sauce – is the perfect combination of smoke & spice. This Malaysian Satay Seasoning represents that flavor, rich in turmeric, coriander, ginger, and cumin, blended with the essential base ingredients of many Malaysian dishes – garlic & shallots. Then dashes of fennel and galangal for depth, a hint of cayenne for some flare, and finally lemongrass for a citrusy reminder that this is a true Southeast Asian seasoning.Japanese Seven Spice: Spicier than you’d expect for a seasoning commonly found on Japanese tables, but when the heat subsides, the sweet, salty, citrusy, nutty flavors reveal the vivid, versatile qualities of this Japanese Seven Spice (Shichimi Togarashi).Sweet & Spicy Curry Powder: This handcrafted curry blend begins with a blend of coriander, turmeric, fenugreek, and cumin – the base spices to create that familiar, but delectable aroma of curry. Then the warming spices are slowly mixed in – cinnamon for its sweetness; ginger for those spicy, lemony notes; fennel to add an element of freshness; and clove for that heavenly, rich fragrance. And finally, as the flavors combine and harmonize, that’s when the spicy kick is mixed in – black pepper, Kashmiri chili powder, and cayenne pepper.Sichuan Peppercorns: An experience more than a flavor, Sichuan Peppercorns create a simultaneous numbing, tongue-tingling, party-in-your-mouth sensation. Match these magical russet-colored husks with chili peppers to make spicy Sichuan dishes at home such as Kung Pao Chicken, Ma La Tofu, and Dan Dan Noodles.Balinese Pyramid Sea Salt: An all-natural sea salt that forms into hollow, pyramid-shaped flakes that gives this unique salt a delectable texture. This amazing, naturally occurring creation from the island of Bali adds a special taste to your Asian dishes, and a must-try on seafood.Tandoori Seasoning: A combination of rich, red spices – Sweet Spanish Paprika and the essential, vibrant kick of Kashmiri Chili Powder – with a hint of turmeric, creates the base of this bright, aromatic blend. Then the warming spices are mixed in – bold flavors commonly used in North Indian cuisine like ginger, cumin, garlic, and cardamom. For balance, coriander is added in, and for a citrus note, dashes of mango powder. Finally, to emphasize that smoky tandoori flavor, a touch of Smoked Spanish Paprika.

Cinnamon Pear Muffins + Giveaway

pear-muffins-2

November officially marks the beginning of baking season in my apartment. Most of the year, I'll occasionally make cookies, pies, and muffins, but spend the majority of my time in the kitchen on savory bites like dumplings, noodles, stir-fries. But come mid-November, the baking kicks into high gear. (So does the pinning of baked good images on Pinterest.)

Mostly I'm testing out food gifts for family and friends or goodies I can contribute to the table for Thanksgiving or Christmas week. The past few years I've been delegated with making pies for Thanksgiving, but this year I'll also add some muffins to the mix for Thanksgiving morning. After all, you can't start preparing turkey, stuffing, gravy, and pies on an empty stomach.

This month I'm doing a post for BlogHer with Del Monte to come up with a holiday recipe inspired by Del Monte® products. So I'm using some Del Monte® Bartlett Pear Halves to make batches of cinnamon-scented muffins. (So fitting for fall, right?)

pear-muffins-1

You can easily have a convenient garden in your pantry with Del Monte® canned fruits and vegetables. Almost all (90%) of their produce is grown in the U.S. The fruits and vegetables are picked and packed at the height of ripeness. And 95% of their canned fruit and vegetables (including tomatoes) are preservative-free. To prepare for a holiday season full of drinking and chocolate-eating, it's good to have a pantry stocked with fruit and vegetables within reach.

I used the Bartlett Pear Halves in 100% pear juice from concentrate. After draining the pears and chopping them up to 1-inch cubes, I just mixed the cubes into the prepared batter and put them into the oven to bake.

It was pretty easy to whip up a batch of these Cinnamon Pear Muffins just after rolling out of bed last weekend, while still in my pajamas, with just a fresh pot of coffee to get me going.  It was a nice and relaxing way to wake up and bake, without needing to run out to the grocery store. The kitchen smelled like cinnamon and nutmeg all morning. This is a scenario I want to recreate on Thanksgiving and Christmas day.

What are your favorite fruit and vegetables to stock in your pantry? Answer in the comments below and you could win a $100 Crate and Barrel gift card!

iPad Mini 16GB Retina Giveaway (WORLDWIDE)

To thank ALL my fans for your continued support and to celebrate the upcoming holiday season, I’m giving away a 16GB Apple iPad mini with Retina Display. There will be one (1) winner whom will receive one (1) 16GB Apple iPad mini with Retina Display. The suggested retail price of the 16GB Apple iPad mini with Retina Display is US$399.

Any way you look at it, iPad mini is just incredible. And the stunning Retina display is only the beginning. With a new A7 chip, advanced wireless, and powerful apps — all beautifully integrated with iOS 7 — iPad mini with Retina display lets you do more than you ever imagined. Feature for feature, it’s identical to iPad Air in every way. Except for its super-portable, hold-it-in-one-hand, still-just-right mini size.

7.9-inch Retina Display
Now iPad mini looks even more brilliant in your hand. The Retina display has over 3.1 million pixels — a million more than an HDTV. That’s a 2048-by-1536 resolution, four times the resolution of the previous-generation iPad mini. In fact, the pixels are so close together, your eyes can’t distinguish them. So photos and videos show incredible detail and text is razor sharp. Because the best pixels are the ones you never see.

Thin and light design
There are many incredible new features inside iPad mini. It has a stunning Retina display, the incredibly powerful A7 chip, advanced wireless technologies, and more. Yet it’s still thin and light (and mini). It’s just 0.29 inch thin and weighs less than three-quarters of a pound. So while you can do even more, you won’t feel like you’re holding any more.

Incredible performance
The new Apple-designed A7 chip brings 64-bit desktop-class architecture to iPad. That means up to 4x the CPU speed and up to 8x the graphics performance for everything you do. And still up to 10 hours of battery life to study, play, build, and create whatever you want, all you want.

Advanced wireless
Your new favorite app, book, or movie. Your next FaceTime call or iMessage. Ultrafast wireless lets you access the things you love, right from iPad mini. So more than ever, you can stay in sync and in touch.

Great apps included
iPad mini is the perfect everyday companion. Because it comes with apps that help you do the everyday things you love to do, like check your email, talk to Mom over FaceTime, or consult Siri to settle a bet. And now iPhoto, iMovie, GarageBand, Pages, Numbers, and Keynote are free with iPad mini.3 So you can write the next great novel, nail your presentation, and compose a score for your home movie — all from your iPad mini. And all these apps are optimized for 64-bit architecture. So they run smoothly and powerfully and make iPad mini — and you — more capable than ever. From the moment you turn it on.

App Store
Plan a road trip. Study whale migration. Draw blueprints for a building. Or repel a zombie invasion. For anything and everything you do, there’s an iPad app. And new ones are always being added in the App Store. iPad apps are so much easier to use and love, because they aren’t just stretched-out phone apps. They feel like they’re made for iPad — because they are made for iPad. They take advantage of every pixel on the Retina display and leverage technologies like the gyroscope, accelerometer, and compass. And with the incredible potential of 64-bit architecture, this is just the beginning for what you’ll be able to do (and explore, and study, and draw, and zap) with iPad mini.
