Soba noodles are native Japanese noodles made of buckwheat flour (soba-ko) and wheat flour (komugi-ko). They are prepared in various hot and cold dishes. Boil about 600 ml of water, and then slowly add one bundle of noodles (for one person), keep water boiling for 3-4 minutes, and stir with a pair of chopsticks. When ready, drain off the water. Now you have several ways to prepare your meal: (1) serve in a soup with various toppings. Some popular soups are Soya sauce based, or miso based (check out item B000BUZWMK on Amazon). (2) Lo Mein: cool down the noodels with cold water. Drain off water, and serves with a Soya based dipping sauce (tsuyu), wasabi (item B000FCI9A6), nori seaweed (item B000BQPXLY or B0009HL7CY).
(3) Cold Noodles: add some vegetable oil or Oliver oil to the noodles and mix thoroughly. Cover the dish with plastic wrap and keep in refrigerator. When serve, do the same as Lo Mein.
